Blueberry Coffee Cake
Ingredients
For cake batter
- 1⁄2 c. butter or margarine
- 8 oz. cream cheese
- 1 1⁄4 c. granulated sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1⁄3 c. milk
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1⁄2 tsp. baking soda
- 1⁄4 tsp. salt
For topping
- 2 c. blueberries (fresh or frozen)
- 1⁄2 c. light brown sugar
- 1 tsp. ground cinnamon
- 1⁄2 c. all-purpose flour
- 1 Tbsp. butter or margarine
Procedure
For cake batter
- Preheat oven to 350°F.
- Cream together butter, cream cheese, and sugar.
- Add remaining ingredients.
- Spread into 9" x 13" baking pan
For topping
- Sprinkle blueberries on top of cake batter.
- Mix together remaining ingredients and sprinkle on top of
blueberries.
- Bake for 30–35 minutes.
